  7. Fill the jar with the pickling liquid (liquid should be cool after 45mins)..
  8. If needed, use a fermentation weight to hold down the ingredients (I don’t often do this and it turns out fine)..
  9. Place pickled watermelon rind jars in the fridge and leave for at least 2 days..
  10. Enjoy as a side dish with rice or add to Vietnamese or Thai salads!.
